Your Illustrated Guide to fried tofu ...

Pour 1/2 to 1 cup canola oil or other over high heat in a wok or a small pan. Want oil to about 1 inch deep (if a large pot is used, you may need more oil). You also need pliers and absorbent towels (or paper towels).

Place over medium heat. To test whether the oil is hot enough, with tongs, dip a corner cube tofu in oil. When it begins to sizzle and cook, the oil is ready.

When oil is ready, put the tofu in the pan with flour. Reduce heat and saute tofu. Tongs, turn the cubes of tofu for 1 minute. Cook until the cubes are golden light.
