- 1/2 cup tapioca pearls - also called "sago" or "Yucca" local Asian grocery store - or so-called "tapioca seeds" in the neighborhood shop
- 2 ripe mangoes (mangoes are ripe when fragrant, and makes them easily with the thumb) Or, if you can not find fresh mango, use a box mango pieces
- 2 1/2 cups of water
- 3c. brown
- 1/4 tsp. Salt
- 1 good quality coconut milk carton

Step 1: Measure 1/2 cup tapioca. Cover with water and soak for 15-20 minutes. Then drain and place in a pot.
Note: If you have large tapioca pearls (size beans or peas), soak for 30 minutes, then bake for 20-30 minutes.
