6 simple steps for a perfect green curry ...

Step 4: Add ½ chicken cut into pieces or 3/4 to 1 pound chicken breasts / thighs, chopped (this will serve 3-4 people). If so, add 2-3 kaffir lime leaves intact (available frozen in most Asian grocery stores). When fresh lemon grass, add pieces of leftover stalks. Stir and bring to a boil.

Heat to medium-low, cover and simmer until the meat is almost cooked - 25 to 30 minutes for the whole chicken or chicken boneless 10-15. Stir occasionally.

For sauce: 1/2 cup chicken broth to. Or creamy green curry, add more coconut milk (1/3 to 1/2 can) or condensed milk (both in Thailand).
