Definition: Enormous and prickly on the outside, Jack sees little like durian (though Jack is usually). Once a mare is open, is cracked inside are pods or "bulbs". Often referred to as seeds, these bulbs are actually a kind of fleshy covering for the true seeds or pits, the round and dark like chestnuts. The fleshy part (the "pear") may be used as is or cut and cooked. When they are ripe (green) is remarkably similar to the texture of chicken, jackfruit make an excellent vegetarian meat substitute. In fact (brine) Canned Jack is sometimes referred to as "vegetable meat".
Jack fruit can be bought frozen, dried, canned or saline (usually unripe) or in syrup (ripe and sweet). If you fresh Jack is a good idea to oil your hands and knife before cutting, because the fruit is very sticky.
Jackfruit contains many vitamins and minerals, and offers numerous health benefits. Isoflavones, antioxidants, phytochemicals and jackfruit means fruit has anti-cancer properties.
