This curry noodle recipe is a shortened version of an old Thai noodle dish called "Kao soy". Since it would be to take the original recipe an hour or more, I am somewhat simplified, keeping the original delicious taste. You can use the eggs or dried wheat noodles for this dish - or splurge and some fresh pasta to your food at the grocery store or local Asian grocery store.
