Preparation
- Combine all ingredients for the marinade / sauce until the sugar dissolves. Place the fish fillets on a flat-bottomed container and pour half of the sauce over. Show fillets in the sauce. (Reserve the remaining sauce for later.)
- Let the fish marinate for at least 10 minutes while the grill heating, or up to 24 hours in advance (only cover and cook in the refrigerator until ready).
- Lightly brush the grill with a little cooking oil, the fish grill for 5-10 minutes on each side or until fish flakes easily and is then the interior flesh translucent.
- Heat remaining sauce and eat it as a bath, nail or spoon over the fish (and rice or potatoes). Note that this season the sauce very strong when you need only a little at a time.
